Bonus recipe:
(just cause I like you I'll also include my recipe for ketchup. if you try this you may be surprised at how little ketchup you actually get but it is a really good way to use up a lot of tomatoes if you have them, which I do, and it's yummy. Also you can use the ketchup to make bar-b-q sauce)
Ketchup:
Ketchup:
Ingredients:
8 lbs tomatoes
1 c. sliced onions
1/2 tsp cayenne pepper
1 c. vinegar
1 1/2 tsp whole cloves
1 1/ tsp broken stick cinnamon
1/2 tsp whole allspice
1 tsp celery seeds
1/2 c. sugar
4 tsp. salt
Method:
cut washed tomatoes in quarters; combine with onions and cayenne pepper. cook uncovered 20 mins, stirring occasionally to prevent sticking. Combine vinegar, spices and celery seeds in kettle. Bring to a boil; remove from heat. Let stand so vinegar will absorb seasoning and spices. Put tomato mixture through food mill or sieve. combine with sugar and cook, stirring frequently, until volume is reduced one half (about 1 1/4 hours). Strain vinegar and to remove spices. Add salt to vinegar and stir into tomato mixture. continue boiling, uncovered, until thick, stirring (about 1/2 hour) pour into hot, sterilized jars; seal at once. Process in boiling water bath 10 mins. makes 2-3 pints.
side note: to make it a little easier I put the spices in a spice bag to eliminate the need for straining.

You must have found another ketchup recipe, because that's not the one I use. Did you ever make the recipe I had sent you? I am so proud of you for making and canning and freezing like you do. I think you are a real homemaker. Not too long until the season is over and then you will have so much time on your hands! That will be a good time to visit your Grandma!!
I did try that recipe last year and I must have done it wrong because it didn't turn out very good. I got this recipe from the book that you recommended to me; farm journal freezing and canning, it's very helpful.
Amy~
