Baked Oatmeal Muffin Cups

Katy is very picky when it comes to breakfast food. She does pretty well for other meals but for breakfast it is a struggle. Tuesday we had our first day back at co-op and around the 11:00 hour she had a meltdown because I hadn't scheduled her a lunch break and she was "so hungry!" Well then I realized she hadn't eaten breakfast and cue the horrible mom guilt! So I've been trying to think of things she could have for breakfast and yesterday we spent a large part of the day in the kitchen.
She helped me make a double batch of energy bars and really likes them! I think this will be a good grab and go meal for her :)
I had also found a recipe for baked oatmeal cups that looked good, so Joanna helped me make a double batch of those!
If you're helping mommy cook you need to wear your rolerblades :P
Thankfully I have three willing taste testers in my house...
Conclusion: Katy doesn't like them, but she doesn't know what she's talking about, they're really good!
I wanted to share the recipe here so I don't have to look it up everytime I want to make it. Actually it was one of those food videos and they are great for whetting your appetite but not so great for following along to and actually making the food :P

Baked Oatmeal Muffin Cups
Ingredients:
              2 eggs
              1 cup brown sugar
              3/4 cup applesauce
              1 1/2 cups whole milk
              2 tsp. Vanilla extract
              1/2 tsp. Salt
              1 Tbsp. Ground cinnamon
Mix all above ingredients together then add
              3 cups rolled oats
Method:
  • Let sit for 20-30 minutes
  • Spray muffin tins with non stick spray, or add muffin liners
  • Add 1/4 cup oat mixture
  • Add toppings (we used mini chocolate chips but blueberries or raisins or nuts would be good too!)
  • Bake 350° for 30 minutes
Enjoy!
